The oil protected by the Regulatory Council is a natural product,elaborated within the limits of the area of production of the denomination.It comes from the direct and manual harvesting of "Arbequina", the appraised variety of olive, with the following features:

OIL FEATURES:

Virgin Oil: It is a natural product obtained from olives in the first pressing, using mechanical procedures that do not modify the natural composition and keep all the vitamins and nutritional contents of the oil.

Extra virgin: Unbeatable quality features.

Fruity Oil: Gives its high-quality and intense scent and taste to the food on which it is used.

 


PHYSICOCHEMICAL:

Acidity Inferior 0,5°
Piroxide index maximum 15
K 270 maximum 0,15
Humidity not superior to 0,1%
Impurity not superior to 0,1%

 

SMELL AND TASTE:

Fragrant: Smelly, with the pleasant sensation of cleanliness, with its own nuances from the production area derived from the Arbequina olive with long tradition in the area.

Balanced: all the gustative properties are well distributed.

All-round: Complete oil, with body and persistent taste sensations.

Depending on the harvest time we can differentiate two types of oil with the denomination:

  • Fruity: It comes from the early harvest, greenish in colour, with more body.The taste is slightly almond-bitter.
  • Sweet: Yellowish in colour more fluid, it comes from the late harvest.
